While there is nothing quite like fresh basil we are also big fans of keeping small amounts of dried basil on hand for use in a pinch or when your fresh basil has wilted. Dried basil has gotten a bad rap over the years due to it sitting in a spice cabinet gathering dust until all the flavor has been sucked out of it. That doesn’t need to be the case.

When skilled home chefs use dried basil they have traditionally leaned toward imported Sweet Basil but now California Basil is considered superior to imported basil and this is primarily due to the advanced dehydration process.

Basil that was dehydrated in poor conditions will quickly lose its sweetness and take on undesired woody overtones. The high quality dehydrators used in California include vacuums that partially lower the temperature at which water evaporates. This allows the basil to be grown in near perfect conditions.

When properly dried basil can provide a more potent flavor than fresh basil and this fresh, sweet flavor of our California Basil will surprise you and you’ll love its beautiful dark green color as well. When stored properly it will also keep quite well in your spice cabinet and the large flakes will keep their potency for months.

Also known as Sweet Basil, Common Basil or Garden Basil, basil has become the most popular herb in the United States mostly due to its unique relationship when used in combination with garlic and tomatoes. Our California Basil has a complex aroma that is spicy sweet with hints of anise and cloves. The flavor has a mildly peppery taste with undertones of mint and cloves and the basil is at the same time sweet and spicy.

Basil works well in combination with cilantro, garlic, marjoram, oregano and parsley. Basil is good with corn, cream cheese, eggs, lemon, mozzarella cheese, olives, peas, potatoes, rice, tomatoes, white beans and zucchini.

Use in salads, soups, stews, omelets, egg salad, pasta, rice dishes and of course pizza.
