Grilled Basil Chicken
Being a Southern girl at heart, I do enjoy a good Paula Dean recipe. This recipe was inspired by a recipe that I found on the food network website. I chose to 'lighten' the recipe a bit by making the marinade with olive oil and omitting the side serving of butter. No, really, this dish was served with a stick of butter softened and mixed with basil on the side!
A very simple marinade of olive oil and chopped, fresh basil is all you need to season this grilled chicken dinner. Fresh and flavorful served with grilled veggies make a very healthy and light outdoor Summer Meal.
The chicken would also be good on a salad with a light balsamic dressing for lunch or a light dinner.

Ingredients:
- 3/4 teaspoon coarse ground black pepper
- 4 skinned chicken breast halves
- 1/4 cup freshly chopped basil leaves
- 2 TBS olive oil
- 2 TBS shredded Romano or Parmesan cheese, divided (optional)
Directions:
- Prepare grill to med/high heat.
- Rub the coarsely ground pepper into the meaty side of the chicken breast halves.
- In a small bowl, stir the chopped basil into the olive oil.
- Brush the chicken lightly with this mixture.
- Sit chicken in refrigerator for at least 20 minutes to marinate and infuse flavors
- Grill the chicken over med/high heat for 8 to 10 minutes on each side, basting basting with any remaining marinade.
- Garnish chicken with a sprinkle of Romano or Parmesan cheese if desired.
- Serve the grilled chicken with grilled, in season vegetables.
