Greek Chicken Casserole
1 Tablespoon olive oil 3 Cups onion, chopped 2 Tablespoons Thyme Leaf 1 Tablespoon Parsley 1 Teaspoon freshly ground Malabar Black Peppercorns 10 garlic cloves, minced 6 Cups red potatoes, diced 2 Cups green beans cut up in 1-inch pieces 1/4 Cup water 2 Tablespoons olives, finely chopped 2 cans no-salt added dices tomatoes 8 skinned, boned chicken thighs 1/2 Cup crumbles feta cheese Directions: 1. Preheat oven to 375°. 2. Heat oil in large Dutch oven and sauté onion for 3 minutes. 3. Add the Thyme, Pepper, and garlic and sauté for 1 minute. 4. Increase heat to medium high and add potatoes, sauté for 8 minutes. 5. Stir in green beans, water, olives and tomatoes and remove mixture from heat. 6. Situate the chicken into the potato mixture and top with feta cheese. 7. Cover and bake at 375° for 45 minutes. Makes 4 servings.
