From the region around the town of Aleppo in northern Syria comes the Aleppo Chile. Many chile heads considered this to be one of the best kept secrets of the chile world. Typically found as a crushed chile pepper with the seeds removed, Aleppo pepper is a flavorful departure from the more common crushed red peppers.
Also known as Halaby pepper. Aleppo pepper has an ideally balanced heat and flavor profile. It comes in at 2,500 - 5,000 SHU (Scoville Heat Units). While a medium range chile the heat builds slowly hitting first the back of your mouth with a hint of sweetness, then teasing your throat before quickly dissipating to a tinge of spur and sweet. The flavor is fruity and raisin-like with an undertone of earthy cumin and just a hint of salty vinegar. Use Aleppo pepper for authentic chili flavor in any Mediterranean or Middle Eastern dish. It can also be used as a substitute for crushed red pepper, paprika or cayenne pepper. We like to mix it in with our Mediterranean Dry Rub for just a little extra kick. We’ve had several of our restaurant chef customers requesting this chile pepper and this will quickly become one of your kitchen favorites. A large jar of this has even made its way to a permanent spot on our dinning room table. Use as a sprinkled topping on pizzas, salads, pasta, baked winter squash, deviled eggs, potato salad or mix it in with chicken or tuna salad. You’ll find it as a heavenly addition to the grill on burgers, chicken, steaks and pork chops.
