Chili Rubbed Salmon
4 Teaspoons Chili Powder Mild 1/2 Teaspoon Coriander Seed Powder 1/2 Teaspoon Sea Salt 1 Teaspoon brown sugar 1 large clove of garlic, minced 2 Tablespoons olive oil Freshly ground Tellicherry Peppercorns to taste 4 Salmon fillets, skin on 6oz each Directions: 1. Combine Chili powder, Coriander Seed, Sea Salt, brown sugar, garlic and olive oil. 2. Rub mixture over fish and set aside for 30 minutes. 3. Meanwhile, heat grill or pan until hot. 4. Place salmon, flesh side down on grill or pan and cook 3 minutes. 5. Be careful to not let the spice mixture burn. 6. Turn and cook until opaque and cooked through, about 4 more minutes. Prep Time: 20 minutes Serves: 4 Calories: 318 per serving A perfect healthy side dish is long grain brown rice or steamed vegetables. |
