Easiest Pancakes Ever!
I am a pancake nut – I love to indulge in a really good Saturday morning stack. However, pancakes can be a diet killer and they really aren't nutrient rich – just rich. Flour, sugar, eggs, buttermilk ….. drooling already. But how do I enjoy one of my very favorite meals without it being so very bad for me?
I have searched healthy pancake recipes, there are so many out there – some tasting more like an old mattress than a fluffy, light, heavenly pancake. Don't get me wrong, I do experiment almost every weekend – some good and some – well … not so good.
But this recipe is super easy, very healthy and you can make the batter is less than 5 minutes - yes, really – I timed it! I had to make them to believe it myself.

Ingredients:
- 1/2 cup oatmeal
- 1/2 cup cottage cheese – I use 1% milkfat, but I am sure fat free would be just as good.
- 1 teaspoon vanilla
- a couple of shakes of cinnamon or pumpkin pie spice
- 4 egg whites
That's it! Can you believe it? This is for 1 serving which made 6 small pancakes – so you can adjust the recipe to feed as many people as you want. Honestly, this was a really big serving – I would even say it is more like 2 servings. I eat 3 pancakes and freeze 3 – they are great out of the toaster for a quick, on the go breakfast
Directions:
- Put all ingredients in a food processor or blender
- Process or blend
- Pour 1/4 cup portions onto a pan lightly sprayed with pan spray
- Cook on each side about 2 minutes until brown
Now, I did cheat and had a little real maple syrup, warmed with frozen strawberries, blueberries and raspberries (just combine in a measuring cup and microwave about 1 min). Of course seasonal fresh fruit would be very tasty as well!
Serves: 1 or 2
