Frito Pie
When you grow up in Texas, you pretty much grow up with Frito Pie. I mentioned to my Northern friends that Frito Pie was a go-to comfort food for me and they had never heard of layering Fritos, chili and cheese into a casserole or pie. This recipe won't go into the light and healthy category - but I did use reduced fat cheese and leftover Spicy Black Bean Chili. you can use canned chili and regular cheese - just be prepared for the little extra next time you step on the scale. I love Frito Pie - but it is a comfort food that should be eaten in moderation.

Ingredients:
- 1/2 of a regular size (3 oz) bag Frito brand corn chips
- 2 cups prepared chili - I used leftovers from our Spicy Black Bean chili - you can use Hormel canned chili as well (with or without beans) - just adjust the nutritional information accordingly
- 1/2 cup reduced fat cheddar cheese
Directions:
- Preheat oven to 400 degrees
- In an oven safe dish layer 1/2 of the Fritos chips on the bottom of the dish.
- Layer chili on top of chips
- Layer remaining chips on top if the chili
- Top with cheese
- Bake in the oven until cheese melts and chili is heated through - about 15-20 minutes
