From the horn of Africa comes the delightful seasoning blend known as Berbere which is considered the culinary foundation of the Ethiopian cuisine. Also called Berbere Spice, Berber Spice and Ethiopian Berbere.

As with many seasoning spice blends from around the world there are as many variations as there are regions, villages and families. This blend is often called the cupboard mix as it seems to have a little bit of everything tossed in – but the prominent spices in Berbere are always centered around the heat of pepper – cayenne, paprika, chili flakes and black pepper (in some variation).  Berbere does pack some spiciness from the chile peppers but it is most flavorful than crazy hot.

Hand blended from cumin, cardamom, allspice, fenugreek, coriander, cloves, black pepper, chili pepper flakes, cayenne pepper, ginger root, turmeric, salt, paprika and cinnamon.

I can't get enough of this stuff. I just ordered a 2nd container because i have been going through the first so quickly. I haven't done much fancy stuff with it, but i have used it on lamb kabobs, ground lamb patties, and my favorite is to mix it with some olive oil and lemon juice, throw in some garlic, then pour it on some mixed vegetables like squash, onion, potatoes, and peppers, then mix in some chicken and bake it all for about 45 minutes. It comes out spicy but delicious, then i just toss it on some rice and enjoy. Anyone on the fence about it should at least give it a try, you won't regret it.

I love this stuff. It goes great on Chicken, and pork. Just the other night i made a simple dish with Zucchini and squash, sliced onions, and then some Chicken. I made a nice little sauce out of lemon juice, the berbere seasoning, and some olive oil and poured it on. Then sprinkled a little more berbere for good measure. Came out beautifully after 45 minutes of baking. Nice flavor, and a slight kick of heat.

This is my first experience with berbere but it is an excellent combination of flavors! I could smell it when my husband brought in the mail! I will be looking for more recipes that use berbere.
