PoBoy Sandwiches
Traditionally, this sandwich is made with fried shrimp or fish, but we breaded and baked our fish to create this NOLA inspired dish with all the taste and not so much fat. We made the Fresh Dill Mayonnaise to compliment this sandwich.

Ingredients:
- 10 ounces fresh tilapia
- 1 tablespoon olive oil
- 3 tablespoons cornmeal
- 2 teaspoons cayenne pepper
- 3 whole wheat sandwich rolls
- lettuce and red onions, chopped
- 3 teaspoons fresh dill mayonnaise
Directions:
- Heat olive oil to medium high in a non stick skillet
- Coat fish with cornmeal and cayenne pepper and cook in oil about 2-3 minutes on each side until cooked through
- While fish is cooking, toast sandwich rolls in oven until crisp but still soft
- Spread mayonnaise on bun, add fish, lettuce and red onions
- Serve
