Caramelized Onion and Black Olive Pizza

This pizza has simple ingredients, but it is 'Oh so Tasty!' The onions do take some prep time, but the rosemary cooking with the onions is just amazing. Trust me, it is worth the wait!

Ingredients:

  • 1 12" pizza dough
  • 1 tablespoon olive oil
  • 1 large sweet or vidalia onion, sliced
  • 1 tablespoon dried rosemary, crushed
  • 1 small can black olives, sliced
  • 1/2 cup part skim mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup jar pizza sauce - or you can make your own

Directions:

  1. Preheat oven to 425 degrees
  2. On medium high heat, heat olive oil in a saute pan.
  3. Add onion and turn heat down to medium low once onions turns transparent, add the rosemary.
  4. Continue cooking onions on low heat until they start to turn brown and caramelize - about 30 minutes.  (Don't be tempted to turn up the heat or they will burn)
  5. Spread pizza sauce onto pizza dough leaving an edge on the pizza about 1/2"
  6. Spread cooked onions and olives evenly over pizza
  7. Sprinkle cheeses over onions and black olives
  8. Bake in oven about 8 - 10 minutes until cheese melts and crust is crispy
  9. Garnish with dried or fresh rosemary
