Taco Pizza on Cornmeal Pizza Crust
Pizza night or Taco night? Can't decide? Then do we have a delicious homemade pizza for you! Use all the ingredients for beefy, spicy, tacos and instead of a soft or hard tortilla shell put them on your favorite pizza crust, add jack cheese - and you have Taco Pizza!
We loved it - the kids will love it and you can control the nutritional value of dinner by using fresh ingredients and low fat cheese.
We made a pizza crust from cornmeal - it was super easy, crispy and thin and the cornmeal is the perfect companion to the taco toppings. You can put this pizza on our whole wheat pizza dough and you have pizza for a crowd! This recipe will make 3 pita pizzas or one thin crust pizza with 6 slices.

Ingredients:
- 1 pizza crust or 3 whole wheat pitas (I used a homemade cornmeal pizza crust)
- 12 oz lean ground beef
- 2 Tablespoons olive or canola oil
- 1 cup yellow onion, chopped
- 1 cup tomato sauce or jar salsa
- 2-3 Tablespoons Manzanillo Mexican Seasoning
- 2 cups reduced fat Monterey jack cheese
- 2 cups shredded romain lettuce
- 2 cups chopped tomatoes
- 1 medium avocado - peeled and chopped
- 3 Tablespoons reduced fat or fat free sour cream
- Fresh or Dried Cilantro for garnish
Directions:
- Prepare pizza crust or pitas on a pizza stone or baking pan - Helpul hint: Lightly dust pizza stone with cornmeal or flour to prevent sticking.
- Saute onions until slightly translucent in oil, add beef and cook until brown and meat is cook through.
- Add Manzanillo Mexican Seasoning to ground meat and stir to combine.
- Stir in tomato sauce or salsa, continue to cook until all ingredients are combined and warm.
- Spread the meat and onion mixture onto the pizza crust or divide evenly over pitas.
- Top with cheese.
- Bake about 10-12 minutes until cheese has melted and crust is browned.
- Top warm pizza with shredded lettuce, chopped tomatoes, avocados ad sour cream.
- Lightly sprinkle Manzanillo Mexican Seasoning over top of pizza - optional.
- Garnish with Dried Cilantro.
