Chicken Fennel and Pepper Pizza
Do you love homemade pizza? This is a recipe that I had really looked forward to trying as it was not a boring run of the mill pizza. Fennel is a very aromatic herb and dried fennel is one of the ingredients in Chinese Five Spice. Fennel has a licorice or anise flavor and adds a mild, but not overpowering flavor to this dish. Coriander compliments the fennel and lends a flavorful and not so traditional twist to this chicken pizza recipe.
I am adding a link to a whole wheat pizza dough recipe that I make easily in the food processor. You can use whatever dough you prefer, just note that the nutritional information is based on the whole wheat pizza dough (thin crust version).

Ingredients:
- 2 tsp olive oil
- 1 bulb fennel, quartered, cored and thinly sliced, plus 1 tablespoon chopped feathery tops for garnish
- 1 red bell pepper, thinly sliced
- 8 ounces boneless, skinless chicken breast, very thinly sliced crosswise
- 1 tsp ground coriander
- 1/2 cup part skim mozzarella cheese
- 1/4 cup shredded parmesan cheese
- Freshly ground pepper, to taste
Directions:
- Preheat oven to 450 degrees
- Heat oil in a large non stick skillet over medium heat.
- Add fennel and bell peppers, until vegetables begin to soften
- Add cut chicken and Coriander, continue cooking until chicken is cooked through
- Top the pizza dough with the chicken and fennel mixture, spreading evenly over the crust.
- Add cheeses and top with ground pepper
- Bake in oven until cheese melts and turns golden brown, 10-15 minutes
- Sprinkle with chopped fennel Serve.
