Breakfast Garden Bake

Easy Garden Bake is a favorite standby breakfast recipe that I found on eatbetteramerica.com. I like it because I can make it at the beginning of the week and have a portion in the mornings as a quick, low cal (150 cals per serving), breakfast. I do like the recipe in it's original form, but I sometimes omit the onions as they can be rather overwhelming first thing in the morning. I also like to substitute broccoli, spinach, bell peppers or mushrooms for the zucchini. Add spices like Mediterranean Oregano, or Manzanillo Mexican Seasoning to add flavor to the dish without adding fat or calories. Pair this dish with a small green salad and it would also make a great lunch or a light Summer dinner.

The thing about a good recipe is that you can modify it to keep it interesting. Today I used spinach for the zucchini. Just be careful that you don't add something that would change the nutritional value of the ingredients. This recipe is super easy to fix and heats up nicely in the microwave for a quick, hot breakfast before you head out the door.

This is the original recipe before substitutions.

Ingredients:

1 cup chopped zucchini
1 large tomato, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1/3 cup grated Parmesan cheese
1/2 cup Bisquick Heart Smart® mix
1 cup fat-free (skim) milk
1/2 cup fat-free egg product or 2 eggs
1/2 teaspoon salt
1/8 teaspoon pepper

Directions:

Heat oven to 400°F. Lightly spray 8-inch square (2-quart) glass baking dish or 9-inch pie plate with cooking spray. Sprinkle zucchini, tomato, onion and cheese in baking dish.
In medium bowl, stir remaining ingredients until blended. Pour over vegetables and cheese.
Bake uncovered about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
