Beef and Cabbage with Peanut Sauce
We used to eat a lot more red meat but now we only have this once or twice a week at the most. Not only do we feel better but it really wasn’t all that hard. When we do have a red meat meal we make sure that we choose the leanest cuts of meat. I have read about it grass fed beef – but that is just too expensive.
When choosing ground beef we typically go for 96%, while about $.70 more per pound than 90% this is an expense that I can live with. On those occasions when the grocery store is out of 96% lean we’ll go with the 90%. You just have to be sure to drain the excess fat after the initial cooking process.
It has been a while since we had this meal but we like it as a healthy ground beef recipe as it has some great texture, is quick and easy to prepare, is loaded with several servings of vegetables and I just love any meal that has peanut sauce. The peanut sauce gives a nice oriental twist to a fairly straight forward dish.

Ingredients:
- 12 oz. Lean Ground Beef (96%)
- 1 Small Yellow Onion, sliced
- 1 Medium Red Bell Pepper, sliced
- Shredded Carrots (equal to about ½ a carrot)
- 3 Cups of shredded cabbage
- 1 - 2 Teaspoons of chili powder (I used Hill Country Chili Powder)
- 4 tsp Peanut Sauce
Directions:
- Brown the lean ground beef over medium high heat for about 5-8 minutes until it is brown
- Add the onion, bell pepper, carrots and cabbage and cook for another 6-8 minutes stirring frequently until the vegetables are soft
- Once the vegetables have finished cooking add the chili powder and peanut sauce and simmer for about 2 minute
