Masala Dabba Spice Set

This limited edition spice set was created by Melissa M. of Anaheim, California. Melissa tells us that the Masala Dabba is the traditional spice box found in most Indian homes and contains small tins of that family’s most commonly used spices in their cooking. This will be an excellent addition to your favorite cook who craves the subtle complexities in Indian food.
Here are your six selections:
Cayenne Pepper - This ground cayenne pepper is a reddish orange in color and may be used in any recipe that calls for ground red pepper. This particular pepper comes in on the heat scale at about a 3.5 (on a scale of 10) but don’t let that lull you to sleep – we still recommend adding this spice to your dishes “one pinch at a time”. This way you will be able to locate the ideal heat level for you.
Turmeric - Our Turmeric comes from Alleppey a region in the farthest reaches of southwestern India. There are several types of Turmeric produced in this region and ours is the higher quality Turmeric "Fingers" which are appendages that are separated from the main rhizome. This top quality Turmeric contains 5%-6% curcuminoids of which curcumin is the primary pigment. Curcumin gives the rhizome its orangish yellow coloring and this color level is also an indication of its quality.
Garam Masala - Garam Masala originated in northern India and is now common in Bangladesh, Indian and Pakistan cuisines Garam Masala is a general purpose, spicy warm (but not necessarily hot) Indian seasoning that is a traditional ingredient in Indian dahl, kormas, samosas and tandoori Indian cooks use it primarily to flavor meat and poultry. Add just before serving for maximum flavor.
Ground Coriander - Coriander is a natural emulsifier or thickener and is a staple ingredient in spice blends like garam masala and curry powder. Coriander features spicy, warm, citrusy flavor and is used in chicken, meat and egg dishes.
Ground Cumin - A very popular spice in Indian cooking, cumin is found in curry powders and masalas and also in mouth-watering vegetable dishes and meat stews. Its distinctive flavor is warm, spicy-sweet and somewhat bitter and should be used sparingly.
Brown Mustard Seed - As Brown mustard grows more abundantly it has increasingly been substituted for black mustard seeds in Indian cooking. Native to the Himalayas our Organic Brown Mustard Seed is cultivated in Canada. Brown mustard seeds start off with a slightly bitter taste but then grow hotter and more aromatic.
