Baked Salmon Fillet with Mustard Breading
4 pieces boneless salmon (6 oz. each), 1 inch thick 1 1/2 tablespoon olive oil Salt and fresh Ground Black Pepper Coarse Grind to taste 3 tablespoons sweet-hot mustard 1/2 teaspoon Thyme Leaf 2/3 cup bread crumbs 1/2 teaspoon Hungarian Paprika 1 tablespoons Parsley Directions 1. Preheat oven to 400°. 2. Place salmon skin side down on a foil lined baking pan and sprinkle with salt and pepper. 3. Combine thyme, bread crumbs, paprika and parsley in a small bowl. 4. Brush salmon with sweet-hot mustard and top with bread crumb mixture. 5. Drizzle with melted butter if desired. 6. Bake in a preheated oven for 15 minutes or until the fish flakes easily with a fork.
