This is our first "Limited Edition Spice Set" and was created by Carolyn W., from Pine Grove Louisiana. This spice set is an exceptional selection of some of the best flavors and seasonings of the Mediterranean region and is ideal for fish, chicken and vegetables dishes.
Research has shown that the traditional Mediterranean diet reduces the risk of heart disease. This diet typically includes fruits, vegetables, pasta and rice. The residents of Greece eat very little red meat have chicken or fish at least twice a week while averaging nine servings a day of antioxidant-rich fruits and vegetables.
These seasonings will allow you to have at your disposal an essential seasoning foundation for this style of cooking. Here are Carolyn’s 10 selections:
Summer Savory – Summer Savory has a peppery bite with a light, herby flavor and aroma and the taste is a subtle cross between marjoram, mint and thyme. Indigenous to the Mediterranean region it works well in combination with basil, bay, cumin, garlic, marjoram, mint, oregano, parsley, rosemary and thyme.
Fennel Seed - Fennel is also known as “the fish herb” by Italian and French cooks who have known that fennel's subtle, anise-like flavor with licorice undertones is the perfect compliment with fish. We recommend grinding the seeds in small batches for maximum flavor. In order to maximize its delicate flavor we recommend that you add fennel at the end of the cooking process.
Basil - Basil is traditionally used in the seasoning of tomato-based sauces, dressings and juices. It blends exceptionally well with oregano for pizza sauce, and with other seasonings, most notably garlic, lemon and thyme. Basil is also found in recipes from the Mediterranean (like pesto, which accentuates this spice).
Thyme - This fragrant perennial is native to the Mediterranean region and is a fairly robust seasoning, so start off with just a pinch or two so as to not overpower your dish and then add more to achieve the perfect taste.
Rosemary - Rosemary’s taste is a bit cooling, woody, minty, and somewhat balsamic, with a strong aroma it is also warm and a little peppery. Unlike many seasonings, rosemary doesn't lose any of its potent flavor or aroma during cooking.
Greek Oregano - In Mediterranean and Italian cooking oregano is an key ingredient and when partnered with Basil makes the two an unbeatable combination in pasta sauces, roasted vegetables and most definitely with pizza.
Whole Sage - Sage is not considered a subtle herb so we recommend that you use it sparingly as it will easily overpower a dish. Sage possesses a robust flavor so it is best partnered with other strong flavors like garlic and pepper.
Tarragon - Dried Tarragon has a warm, sweet, anise/minty aroma and flavor and is very popular in many European cuisines, most notably those from the French. Tarragon's taste tends to fade a bit when cooking, so in order to enhance its flavor you should add it near the end of the cooking process.
Tomato Powder - Tomato Powder is made from all natural pure sweet tomatoes. Ideal for the cook who doesn’t need a whole can of tomatoes. Sprinkle it on pizza, salads, scrambled eggs, nachos or just about any other dish that you can use fresh tomatoes on.
Mediterranean Cyprus Flake Salt - It has a mild taste characteristic of Mediterranean salts and is wonderfully light and fluffy. One interesting aspect to this salt is that because it sits on top of food the combination of a saltier taste will be met with less salty bites leaving a uniqueness that is unforgettable.
