Spicy Chipotle Hummus
Hummus is a healthy, creamy dip or spread that is traditionally made from mashed chickpeas, garlic, Tahini (sesame seed butter) and lemon juice. What you may not be aware of is how easy it is to make at home and how many varieties of hummus you can make. This Middle Eastern favorite has a long and rich history in countries like Syria, Israel, Turkey, Greece, Cyprus and Lebanon. Not only does hummus deliver a delicious flavor but it is also packed with great nutritional value. The key ingredient of hummus is chickpeas and these are loaded with protein and fiber as well as numerous vitamins and minerals such as folic acid, zinc, and magnesium. Tahini paste adds some additional protein and fiber along with monounsaturated fat (good fats). And don’t be afraid of tahini paste as you can find a simple homemade tahini recipe here. This is delightful twist on the popular red pepper hummus and the result is a slightly spicy and smoky hummus from the subtle complexities provided by the Chipotle chiles. Ingredients: 2 Cans chickpeas or garbanzo beans (each can is approximately 14.5 oz), drained and rinsed 4 Tbsp tahini, heaping 2 Tsp olive oil 1 Tsp crushed chipotle flakes 2 Tsp ground cumin 2 Tsp ground coriander 2 clove garlic, diced 1 lemon, juiced Directions: 1. Combine chickpeas tahini, oil, pepper flakes, cumin, coriander, garlic, and lemon juice in food processor bowl and grind into a smooth paste. 2. Transfer to a small dip bowl and serve warm pita wedges, veggies or use as a spread on your favorite sandwich instead of mayo.
