Native to the Moluccas, the volcanic islands of Indonesia, cloves have a rich history in Indian cuisine. Cloves should be used in smaller quantities as they can easily overpower other spices. In this country we are most familiar with whole cloves used to stud hams.
The aroma of cloves is strong and warm with traces of pepper while the flavor is biting, hot and bitter but it also has a slightly fruity taste. Our Organic Ground Cloves are imported from Sri Lanka as are our popular Organic Whole Cloves. Cloves are labor intensive to grow. The harvest time is critical as just prior to the buds blossoming, they turn pink. It is at this point that they must be picked immediately. Once dried the cloves are very delicate and must be handled with great care as they can break easily. In North Africa and the Middle East cloves are found in spice blends that flavor meat and rice dishes usually with cardamom and cinnamon. Throughout much of Asia cloves are used in curries. In Mexican cuisine they are often partnered with cumin and cinnamon. Cloves are a key ingredient in Chinese Five Spice and Garam Masala. Ground clove is good with apples, beets, carrots, chocolate, ham, onions, oranges, pumpkin, squash and sweet potatoes while adding a spicy complexity to applesauce, cakes, cookies and gingerbread. We’ve also used it as a secret ingredient in homemade BBQ sauce. Ground clove partners well with allspice, bay leaves, cardamom, cinnamon, chili, coriander, fennel, ginger, mace and nutmeg. In addition to our Organic Whole Clove we also carry a non-organic Ground Cloves. |
