Peanut Butter Turkey Marinade
Are you searching for a way to really step outside the proverbial box when it comes to seasoning your turkey? This one is certainly unique but also loaded with flavor and best of all it is a relatively healthy marinade (although the sodium levels will be just a bit high due to the chicken broth and soy sauce).Madras Curry (also called Madras Powder or Madras Curry Powder) is a seasoning favor that originated in Southern India and ours is a convenient blend for those ready to take the step from the traditional curry powders into something even more intriguing. This is a very spicy curry although not necessarily considered hot. As with all of our turkey marinade recipes we recommend using all natural turkeys with “natural” or “no preservatives added” on the outer package. Otherwise you’re probably getting a self-basted bird that's already been injected with a salt solution (and other flavorings). Ingredients: 10 lb. turkey, thawed 1 cup natural peanut butter 1/cup dry sherry 1 cup low sodium chicken broth 2 tbsp Madras curry powder 2 tsp low sodium soy sauce 2 garlic clove, minced 2 shallot, minced ½ tsp ground pepper, coarse Directions: 1. In a medium mixing bowl add the peanut butter, sherry, broth, Madras curry powder and soy sauce in a bowl and mix until smooth 2. Next mix in the garlic, shallot and pepper 3. Put your turkey into a large plastic zip lock or brining bag and pour in the marinade 4. Seal the bag and repeatedly turn to evenly coat the turkey 5. Refrigerate 8-12 hours 6. Pre-heat oven to 325°F 7. Remove the turkey from the bag and place on a rack in a roasting pan 8. Roast for about 5-6 hours 9. Baste often with marinade 10. Make sure turkey reached an internal temperature of at least 150 degrees (check the thigh and the breast areas) |
