Pumpkin Seed Butter Pumpkin seeds are great as a healthy snack but they are even better as a butter. Pumpkin seed butter can be used in all the ways you might use a nut butter. Use Pumpkin Seed Butter as a spread on your bagels, muffins, toast, celery, apple slices, in oatmeal or it can be substituted for nut butters in your favorite baking recipe.Pumpkin Seed Butter is packed with nutrients especially iron, zinc, potassium and protein. This is a super simple recipe and a great healthy alternative to the much more common peanut or almond butter. This butter may not look as appetizing as these more familiar nut butters but boy is it good. Toast your own pumpkin seeds for this by putting them in your skillet on low medium heat and cook until they start to brown --- be sure not to overcook or they will get a bitter burnt taste. We use coconut oil in this recipe as it is extremely heart-healthy. Refrigerate when done but let it set at room temperature before using. Ingredients 3/4 cup of toasted pumpkin seeds 1/4 cup of coconut oil 2 tbsp honey 2 tsp Saigon Cinnamon Powder 1/4 tsp Sea Salt Directions: Add all of the ingredients to your food processor and blend until you are happy with the consistency. You may want to add slightly less or slightly more coconut oil.
