Low Fat Oatmeal Pumpkin Cookies
Don’t you just love cookies? Talk about the ultimate comfort food. Well if you crave cookies especially around the holidays but you’re also trying to watch your weight then you can’t go wrong with this low fat version (only 1 gram per cookie). Now if you’re not overly concerned about calories you could also add some nuts to these (we’ve added walnuts in the past for some extra crunch). Remember these are cookies and it is fun to splurge every once in a while! Ingredients: 1 cup pumpkin puree (about ½ the can) 1 cup light brown sugar 2 egg whites 1 1/2 cup whole wheat flour 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. cloves 1/2 tsp allspice 3 cups of Quaker rolled oats 1/4 cup water 1/2 cup raisins Directions: 1. Preheat your oven to 350 degrees 2. Spray baking sheet with cooking spray 3. Using a large bowl thoroughly mix the egg whites and pumpkin 4. In a second bowl mix the brown sugar, flour, baking soda, cinnamon, nutmeg, cloves, allspice, oatmeal water and raisins 5. Slowly add the mixture from the second bowl into the first and stir frequently. Your cookie batter will start out very dry. Once all of the ingredients have been added mix only until the batter is consistent. 6. Scoop the cookie dough with a tablespoon and drop them on the cookie sheet about 2” apart. 7. Once all of your cookie balls are on the sheet you can lightly flatten them with your spoon 8.
