Turkey Chili

This dish is low in fat and is only 283 calories, much less than the 450-600 calories found in so many other chili recipes. This turkey chili recipe is also high in fiber and protein. You may also want to top this chili with some low fat grated Mexican cheese, diced onion and low fat sour cream – this will bring extra flavor and protein but not much fat.

1 pound lean ground turkey
1 small yellow onion, chopped
3 15-ounce cans red kidney beans, rinsed and drained
3 14.5-ounce cans chopped tomatoes
1 cup water
2 celery stalks, chopped
1 medium green bell pepper, seeded and chopped
1/4 cup red wine vinegar
2 tablespoons Chili Powder
2 teaspoons Ground Cumin

1 teaspoon
Mexican Oregano
1 teaspoon Parsley

1 teaspoon Basil

Directions:
1.  Heat a large Dutch oven over medium heat until hot
2.  Add ground turkey and chopped onion, and cook until browned
3.  Add the remaining ingredients and bring to a boil
4.  Reduce heat and simmer on low heat for two hours
5.  Garnish with optional toppings
