This is the Certified Organic Cassia Korintje Cinnamon that we source from Indonesia. It is no longer the most popular cinnamon that we carry, that distinction now belong to our Organic Saigon Cinnamon, but like our standard Korintje Cinnamon Powder it is the cinnamon that most American’s are used to finding in their own kitchens.

The Korintje (or thick quill cinnamon) is one of several types of available cassia cinnamon, the Batavia (or thin quill cinnamon) is the other, lesser quality cassia. Our Korintji is harvested from higher altitudes than the Batavian Cassia and this gives it both a sharper cinnamon flavor and a subtly intense reddish-brown color. This is the highest quality Organic Korintje Cinnamon available with a Grade A rating and 3% cinnamon oil content (while the local grocery store usually carries the lower grade B or C). Cinnamons with a Grade A rating provide the highest oil content of all the cinnamons while featuring more intense aroma and flavor. Grade A harvested quills must be at least one meter in length and taken from the main trunk of the tree (not the branch).
