Native to the eastern Mediterranean region parsley was brought to American by the first colonists and it has been cultivated here ever since. A core seasoning, parsley herb is a favorite ingredient in American, European and Middle Eastern cooking. It is found in traditional ethnic recipes for hummus, baba ganoush and tabbouleh and in spice blends like persillade (a French mixture of parsley and garlic), fines herbes and bouquet garni.
Dried parsley is one herb that many Western cooks find to be irreplaceable and is one of those herbs and spices that really brings out the flavor of other seasonings and it works well in combination with basil, chili, oregano, pepper, rosemary, sumac and tarragon.
Parsley leaves add beautiful green color with a vegetable aroma and taste to just about any dish and is especially good with fish, egg, lemon, tomato and grain dishes. Helpful hint - for best flavor add parsley towards the end o the cooking process.
Some of the popular recipes with Parsley include Herb Roasted Potatoes, Ham Frittata and Greek Chicken Casserole.
