Peach and Ginger Salsa 3 to 4 ripe peaches, pitted and chopped 1/2 red or green bell pepper seeded and chopped 1/2 sweet onion, chopped 4 or 5 pieces crystallized ginger, minced 1/3 to 1/2 cup fresh basil, chopped 2 TBS lemon juice 1 tsp red pepper flakes fresh ground pepper to taste Directions: Toss all ingredients together, cover and refrigerate for at least 1 hour. This salsa would compliment grilled sausage or pork chops. The ginger adds a little unexpected flavor and sweetness while the heat of the red pepper flakes provide a kick. You could substitute mint, parsley or cilantro for the basil. If you use fresh ginger, grate it and add about 1/2 tsp sugar to provide the sweetness. |
