Fresh Heirloom Tomato Salsa Salsa out of a jar just does not compare to fresh tomato salsa. Heirloom tomatoes add color to the traditional red tomato salsa. Just make sure the tomato is slightly firm so that it doesn't fall apart when diced. I prefer a sweet yellow onion to balance the heat of the jalapeño and the Liquid Smoke is a hint passed down in my family that gives the salsa a smokey grilled flavor. 2-3 medium sized fresh heirloom or vine ripe red tomatoes (from 1 lb to 1 1/2 lb), stems removed, finely diced. 1 small yellow onion, finely diced 1 jalapeño chili pepper (stems, ribs, seeds removed), finely diced Juice of one lime 1/2 cup chopped cilantro Salt and pepper to taste 3-4 drops Liquid Smoke Optional: oregano and or cumin to taste Directions 1. Combine all of the ingredients in a medium sized bowl. Taste. If the jalapeño makes the salsa too hot, add some more chopped tomato. If not hot enough, carefully add a few of the seeds from the jalapeño, or add some ground cumin. 2. Let sit for an hour for the flavors to combine. Makes approximately 3-4 cups. Serve with chips, tortillas, tacos, burritos, tostadas, quesadillas, pinto or black beans. |
