Bruschetta with Garlic Roasted Sweet Red Peppers
Be sure to top the bread right before serving because it will get a bit soggy if sitting for awhile. The balsamic vinegar gives this dish a bit of a bite and the roasted peppers bring a wonderful sweetness. We have added avocado, pesto on top of the bread before the Bruschetta mix and even some chopped up black olives. If you prefer you and also use roasted fresh peppers. 16 ounces French bread 2 tablespoons olive oil 1 16 ounce jar marinated roasted sweet red peppers 3 cloves chopped garlic 1 tomato, seeded and chopped 3/4 cup chopped fresh basil 1 chopped onion 3 teaspoons balsamic vinegar Directions: 1. Preheat your oven's broiler 2. Slice bread loaf into 1-inch thick portions 3. Brush each slice on both sides with olive oil 4. Broil until just golden then turn and broil the other sides 5. Remove from broiler pan and cool 6. In a medium bowl, mix together roasted pepper, garlic, tomato, basil, and onion 7. Sprinkle mixture evenly on each toast portion 8.
