Causa Rellena
Causa Rellena is a layered potato dish that's made with yellow potatoes and either chicken or tuna salad. This traditional Peruvian dish is served cold and can be an appetizer or a light meal. The potatoes can also be molded or cut into circles to create a type of potato sandwich with the chicken or tuna salad in the middle. Serve on lettuce and top with black olives.
If you use dried chiles, soak them in warm water for about 5-10 minutes to make them easier to seed and mince.
