Looking for a dry rub that is a bit out of the ordinary? This is an almost pure white spice blend that packs the light, delicate heat of white pepper, popular in Europe, but with a hint of sweetness from the sugar. Sugar is great with dry rubs as it gives a caramelized effect to the meat by forming a wonderful light crust. This blend is ideal on steak or with burgers and all of these "white" ingredients are finely ground and perfectly blended.
We have found that finely ground spices stick to the meat better. There is nothing worse than after a couple of flips on the grill most of the spices have fallen off your meat and into the bottom of the grill! We tested this blend on some skirt steaks, some t-bones and some burgers and all were voted delicious by our taste testers. As with any rub we like to liberally shake it on the meat and then rub it in with our hands so that it is evenly coated. For the burgers we sprinkled it on and patted it in. We then refrigerated for about 2 hours before adding to the grill. Hand blended from white pepper, onion powder, garlic powder, sugar and sea salt.
