De Arbol chile peppers are a favorite in Mexican cuisine because of their bold heat and subtle smoky flavor. This chile is seldom found fresh and is considered a fairly hot pepper, coming in at 8-9 on the heat scale of 10. Quite popular in western Mexico, they are also known as “pico de pajaro” (bird beak) or “cola de rata” (rat tail). Unlike many chiles, these remain bright red even after the are dried.
De Arbol have a natural, grassy flavor with a hint of nuttiness. The flavor of De Arbol chile is considered superior to other chile peppers by many competition chili chefs and is considered a staple in many southwestern US kitchens. In its pod form the De Arbol is often used to flavor oils and vinegars and as a powder the De Arbol is perfect in any dish where you want to increase its heat level. Grind fresh and use in chili, salsa, hot sauce, tacos, soups and stir fry. These attractive peppers are also frequently used for craft work such as chile wreaths or ristras. Toast them and then toss in the blender with tomatillos, onion, garlic and a little water for a great table salsa. There are approximately 45 chiles per ounce.
