Diabetic Twelve Layer Salad
Salad 1 cup fresh chopped spinach 1 fresh sliced carrot 3/4 cup fresh chopped celery 1 cup fresh chopped red cabbage 1 cup fresh broccoli florets 1 cup chopped lettuce 1/2 sliced medium bell pepper 1/2 sliced fresh tomato 1/2 cup cooked and drained fresh green beans until crisp-tender then cooled 1/2 cup finely chopped parsley divided 5 oz can red kidney beans drained and rinsed 1/2 thinly sliced red onion 1 1/2 large hard-boiled eggs cut into wedges Garlic Dressing 3/8 cup mayonnaise 3/8 cup fat free sour cream 2 medium garlic cloves, minced 1/2 teaspoon dried Sweet Basil 1/2 teaspoon ground Mediterranean Oregano 3/8 teaspoon ground Tarragon Leaf Directions: 1. Layer all ingredients, except dressing ingredients and eggs, in a glass bowl 2. Toss 3. Whisk together mayonnaise, sour cream, garlic, and herbs until smooth 4. Chill until ready to use 5.
