Diabetic Three Cheese Fondue

1 tablespoon margarine
1/4 cup finely-chopped onion
2 minced garlic cloves
1 tablespoon all-purpose flour
3/4 cup reduced-fat milk
2 cups shredded sharp Cheddar cheese
1 3 oz package cream cheese cut into cubes
1/2 cup crumbled blue cheese
1/8 teaspoon ground Red Pepper Flakes

4 drops hot pepper sauce
Breadsticks and assorted fresh vegetables

Directions:

1.  Heat margarine in small saucepan over medium heat until melted
2.  Add onion and garlic
3.  Cook and stir 2-3 minutes until tender
4.  Stir in flour and cook 2 minutes stirring constantly
5.  Stir milk into saucepan
6.  Bring to a boil stirring constantly for 1 minute or until thickened
7.  Reduce heat to simmer
8.  Add cheeses, stirring until melted
9.  Stir in red pepper and pepper sauce
10. Pour fondue into heated fondue dish
11. Sprinkle fondue with parsley and ground red pepper
12. Serve with dippers
