Portabella Pizza

Portabella mushrooms are so hearty and easy to use for so many things. If you have not had a grilled Portabella mushroom burger - you should try it. They are big and meaty and a great vegetarian substitute for a beef burger patty.

This recipe takes the idea of a stuffed mushroom and makes it a meal. I like this because it is super easy, super healthy and I can make one serving - perfect for a light lunch - no reason to stop for fast food when you can make something this good!

Portabella Pizza

Ingredients:

  • 1 large inch portabella mushroom cap
  • Cooking spray
  • 1/4 cup pizza sauce
  • 1 slice lean, deli-sliced ham, finely chopped
  • 3 teaspoons Pizza Seasoning or Dried Basil
  • 3 tablespoons shredded part-skim mozzarella cheese

Directions:

  1. Preheat oven to 400°F
  2. Lightly clean mushroom with a damp paper towel. Hint: It is generally not a good idea to wash mushrooms because they retain too much of the moisture.
  3. Trim mushroom stem even with cap
  4. Place mushroom cap with gills facing upward in a small baking pan coated with cooking spray
  5. Layer pizza sauce, ham, and basil in cap and sprinkle evenly with cheese
  6. Bake for 16–20 minutes, or until mushroom is tender when pierced with a fork and cheese is melted
