Portabella Pizza
Portabella mushrooms are so hearty and easy to use for so many things. If you have not had a grilled Portabella mushroom burger - you should try it. They are big and meaty and a great vegetarian substitute for a beef burger patty.
This recipe takes the idea of a stuffed mushroom and makes it a meal. I like this because it is super easy, super healthy and I can make one serving - perfect for a light lunch - no reason to stop for fast food when you can make something this good!

Ingredients:
- 1 large inch portabella mushroom cap
- Cooking spray
- 1/4 cup pizza sauce
- 1 slice lean, deli-sliced ham, finely chopped
- 3 teaspoons Pizza Seasoning or Dried Basil
- 3 tablespoons shredded part-skim mozzarella cheese
Directions:
- Preheat oven to 400°F
- Lightly clean mushroom with a damp paper towel. Hint: It is generally not a good idea to wash mushrooms because they retain too much of the moisture.
- Trim mushroom stem even with cap
- Place mushroom cap with gills facing upward in a small baking pan coated with cooking spray
- Layer pizza sauce, ham, and basil in cap and sprinkle evenly with cheese
- Bake for 16–20 minutes, or until mushroom is tender when pierced with a fork and cheese is melted
