Diabetic Mexican Rice
Butter flavored cooking spray 1/2 cup fresh chopped onion 2 cups low fat unsalted chicken broth 2 cups brown rice 1/4 cup shredded carrots 1/4 teaspoon Ground Cumin 1/8 teaspoon Cayenne Pepper Medium Heat 1/4 cup thinly sliced scallions 1 medium lemon Directions: 1. Lightly spray a medium nonstick saucepan with cooking spray 2. Add onion and sauté over medium heat until the onion wilts 3-4 minutes 3. Add the broth and bring to a boil 4. Stir in the rice, carrot, cumin and cayenne pepper 5. Cover and remove from heat 6. Let stand for 5 minutes 7. Fluff the rice with a fork, stirring in the scallions 8. Garnish with lemon 9.
