Diabetic Curried Chicken

6 boneless, skinless chicken breasts
3 teaspoons oil
1/2 chopped onion
2 cloves crushed garlic
1 1/2 cup low sodium chicken broth
1/2 cup water
1/2 teaspoon Ground Cumin

1/2 teaspoon Coriander Seed Powder

1/2 teaspoon Turmeric Powder

1/8 teaspoon Ground Jamaican Allspice

1/8 teaspoon Ginger Powder

Dash dried crushed Fennel Seed

Dash Cracked Black Pepper
 
1 teaspoon coconut flavoring

Directions:
1.  Add 2 teaspoons oil in a large skillet
2.  Saute chicken until golden on both sides
3.  Remove chicken from pan
4.  Saute garlic and onion in remaining oil 6 minutes
5.  Add broth, water, and all of the spices to garlic-onion mixture
6.  Stir to blend
7.  Return chicken pieces to skillet
8.  Cover and simmer over medium heat for 30 minutes
9.  Stir in coconut flavoring
10. Serve over rice
