Diabetic Curried Chicken
6 boneless, skinless chicken breasts 3 teaspoons oil 1/2 chopped onion 2 cloves crushed garlic 1 1/2 cup low sodium chicken broth 1/2 cup water 1/2 teaspoon Ground Cumin 1/2 teaspoon Coriander Seed Powder 1/2 teaspoon Turmeric Powder 1/8 teaspoon Ground Jamaican Allspice 1/8 teaspoon Ginger Powder Dash dried crushed Fennel Seed Dash Cracked Black Pepper 1 teaspoon coconut flavoring Directions: 1. Add 2 teaspoons oil in a large skillet 2. Saute chicken until golden on both sides 3. Remove chicken from pan 4. Saute garlic and onion in remaining oil 6 minutes 5. Add broth, water, and all of the spices to garlic-onion mixture 6. Stir to blend 7. Return chicken pieces to skillet 8. Cover and simmer over medium heat for 30 minutes 9.
