Sesame is one of the oldest seeds known to man. It is widely believed to have originated in India or Africa and the first written record of sesame dates back to 3,000 BC. There are three varieties of sesame seed – white which is the most common, pale which is also referred to as golden or pale gold, and black. Our organic black sesame seed is harvested in China.
Black sesame is frequently used in Japanese and Chinese cooking. While white Sesame Seed are most frequently toasted before using black sesame seeds are not typically toasted as many cooks believe that they become bitter during the dry roasting process. This is not believed worldwide as Japanese cooks will often lightly roast them before using.
Black sesame is used in the Japanese condiment goma shio and in China it is popular in fried toffee bananas and apples. In this country it is popular when combined with white sesame and other spices to become a crusted breading for meats and fish. We have also used it in Asian style stir fries.
