Known as China Tung Hing Cinnamon, this is one of newest additions to our growing cinnamon collection. Chinese cinnamon is an essential spice in China where it is used in braised dishes and sauces. This cassia cinnamon is considered a grade A cinnamon and has an oil content of 4% (grocery stores usually carry the lower grade B or C with a lower cinnamon oil content). In this country most of us are most familiar with Korintje cinnamon from Indonesia as it is a less expensive grade of cinnamon.

Bakers typically prefer Chinese cassia cinnamon for its sweet milder flavor, which blends better in dishes where cinnamon is meant to be a complimentary flavor. We also use this in cinnamon when we blend our Chinese Five Spice.
