Tilapia with Jalapeno Sauce
1/4 cup low fat mayonnaise 2 thinly sliced scallions 1 Jalapeno pepper, seeded and minced (wear gloves to prevent irritation) 2 tablespoons chopped fresh cilantro 1 tablespoon fresh lime juice 1 tablespoon Fajita Seasoning 4 6-ounce Tilapia Fillets 2 teaspoons canola oil Directions: 1. To make the jalapeno sauce combine the mayonnaise, scallions, jalapeno, cilantro, lime juice and a teaspoon of the fajita seasoning in a serving bowl 2. Set aside 3. Sprinkle both sides of the fillets with the remaining fajita seasoning 4. Heat the oil in a large nonstick skillet set over medium-high heat 5. Add the fish and cook until browned and just opaque in the center, about 3-4 minutes on each side 6.
