Mexican Tortilla Dinner

This was a quick and easy dish to put together and can be modified to fit just about any meal plan.  I used ground meat, but you could very easily make this a vegetarian dish by added more black beans, (or a mixture or black and kidney beans) and eliminate the ground meat.  Of course the cheese is optional as well.  I also made this dish healthy, by eliminating salt.  Our Salt-Free Taco Seasoning added flavor and heat, without adding sodium.

I made my own salsa to go along with this dish.  This time, instead of onions in my salsa, I used Jicama.  Jicama is a root vegetable, much like a turnip or potato, but I guess not related.  You can peel Jicama and eat it raw and it has a starchy, sweet taste.  I like to add it to salsas and Mexican dishes for a little crunch.  I can”t always find it at my local grocery, but it must be in season now, because they have had it for the past few weeks.

Salsa:

  • 2 small tomatoes, rough chopped
  • 1 cup Jicama, diced
  • 1 jalapeno, seeded and deveined
  • 1/4 tsp liquid smoke (really, just a dash)
  • juice from 1 lime
  • Handful of fresh cilantro

How to Prepare:

  1. Put all ingredients in a food processor or blender
  2. Pulse until combined – I like my to have a chunky texture – but you can puree if desired.

I do not add spices to my salsa, I like the fresh taste of the lime and cilantro.  But you could add Ancho or Chipolte for a different flavor and smokiness.

Mexican Tortilla Dinner

  • 1 lb ground beef – I buy the leanest I can find
  • 1/2 about 1 cup can black beans (Look for salt free)
  • 1 clove garlic, minced
  • 2 TBS Salt-Free Taco Seasoning – You can add more or less – depending on your taste
  • 4-8″ whole wheat flour tortillas
  • 2 cups fresh or canned tomatoes (Look for the salt free)
  • 1/2 cup shredded cheddar or jack cheese
  • 1/2 cup salsa

How to Prepare:

  1. Add ground meat, garlic and Salt-Free Taco Seasoning to skillet and cook until beef is browned.
  2. While beef is browning, heat tortillas in oven – I used my broiler – for a few minutes until slightly crisp
  3. Cut tortillas into strips or triangles, bite sized pieces
  4. Add tomatoes, salsa and cut up tortillas to beef mixture
  5. Sprinkle cheese on top of the mixture and cover until cheese melts
  6. Garnish with avocados, sour cream, cheese, salsa, diced Jicama, chopped bell peppers……  so many choices!
