Ok – this was absolutely FABULOUS!! Of course I made modifications to the original recipe. Instead of pizza dough, I used whole wheat pita and I subbed turkey bacon for real bacon and added a couple good shakes of red pepper flakes to spice things up! Not that I have anything against real bacon – but I had turkey bacon in the fridge. This was a super easy Sunday night dinner – sure to be a favorite!
Inspired by Eating Well Magazine.
Ingredients:
- 3 whole wheat pitas
- 2 strips Turkey Bacon
- 1 tsp olive oil
- 1/2 cup sliced shallots
- 1/2 pound asparagus, trimmed and cut into 2″ pieces
- 2 large eggs
- 1/8 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp red pepper flakes
- 1/2 cup shredded extra sharp Cheddar cheese
Yummy asparagus and turkey bacon!
Directions:
- Preheat oven to 500 degrees F
- Coat a large baking sheet with pan spray – place pitas on baking sheet
- Cook turkey bacon until crisp – remove from pan and chop
- Add olive oil to pan and heat
- Add shallots to the pan and cook until they begin to turn brown
- Add asparagus to pan and cook until they begin to soften, 2 to 3 minutes
- Spread vegetables evenly over the 3 pitas
- Divide turkey bacon over the 3 pitas
- In a small bowl, whisk eggs, salt, pepper and red pepper flakes
- Pour eggs onto pitas and veggies – careful not to let eggs run over sides of pitas
- Add 1/3 of the cheese to each pita
- Bake in oven until eggs are set and cheese is melted 8-10 mins
Greg had two and I had one!
