Cactus and Sweet Potato Burrito at El Camino Real in Philly

Happy Valentines Day to all!!

Last night we went to see our son, Rob, who lives in Philadelphia which is about a 2 1/2 drive from where we live in NE Pennsylvania.  We had been planning a trip to see him this weekend and decided to go despite the massive snowfall that Philadelphia got earlier this week.

Rob shoots all the spice products for the SpicesInc.com website.  When we get new product or Greg creates new blends we either have Rob come up or we take everything down there for the photo shoot.  It also allows us time to spend with him and visit the city.

It hasn”t snowed since early in the week – but the roads were horrible!  The benefit to being in a rural area is the amount of space – snow is plowed up everywhere but we can still get around.  There is just no where to put so much snow in the city.  Many of the streets were barely passable and cars were parked anywhere they could find space.  It was an adventure to say the least.

The good part is that we usually get to go out to eat after we finish with the work and we were able to get into one of our favorite restaurants, El Camino Real, last night for dinner.

I started my dinner with a papaya margarita which was festive and very tasty.  Greg ordered a Steak Burrito which had chili marinated skirt steak, salsa chihuahua, crispy onions and crema.  He paired that with a side of black beans and rice.  My dinner was a Cactus and Sweet Potato Burrito with cactus, sweet potatoes, cilantro, onion and chipotle crema.

Everything was absolutely delicious and it has inspired me to use sweet potatoes in a burrito recipe that I am preparing for this week.  (Stay Tuned!)

I””ve made squash & black bean burritos a few times. They””re always delicious. I”m sure sweet potatoes would be just as good!

Squash and black beans sounds good too! I am making chipotle chicken and sweet potato burritos for dinner tonight – I will you know how they turn out!
