During the week, I grab a quick and healthy breakfast. Sometimes Kashi cereal and fruit – sometimes I scramble an egg into a bowl of brown rice – but time is of the essence during the week. We go to the gym in the morning and then I am out the door by 8AM for my job in Hospital Human Resources.
On Saturday, I like to take my time and make a good breakfast that I can savor while having a cup of coffee, reading the weekend paper and making plans for the day.
Yesterday, we had a big dump of snow – so it was a perfect day to stay in and linger over breakfast. Here is a yummy Saturday morning meal.

Here is What You Need:
- 1 egg
- Cracked black pepper
- 1 vegetarian garden burger – mine is Portabella Mushroom
- 1 med orange
- Pan Spray
What To Do:
- Heat the garden burger per package directions
- Cook the egg in a skillet with pan spray – you can break the yolk or not – I like mine ”over easy”
- Add a little cracked pepper on the egg
- Peel orange
Add a cup of sugar-free International Coffee and the weekend paper and you are off to a good start to the day!
