Saturday Morning Breakfast

During the week, I grab a quick and healthy breakfast.  Sometimes Kashi cereal and fruit – sometimes I scramble an egg into a bowl of brown rice – but time is of the essence during the week.  We go to the gym in the morning and then I am out the door by 8AM for my job in Hospital Human Resources.

On Saturday, I like to take my time and make a good breakfast that I can savor while having a cup of coffee, reading the weekend paper and making plans for the day.

Yesterday, we had a big dump of snow – so it was a perfect day to stay in and linger over breakfast.  Here is a yummy Saturday morning meal.

Here is What You Need:

  • 1 egg
  • Cracked black pepper
  • 1 vegetarian garden burger – mine is Portabella Mushroom
  • 1 med orange
  • Pan Spray

What To Do:

  1. Heat the garden burger per package directions
  2. Cook the egg in a skillet with pan spray – you can break the yolk or not – I like mine ”over easy”
  3. Add a little cracked pepper on the egg
  4. Peel orange

Add a cup of sugar-free International Coffee and the weekend paper and you are off to a good start to the day!
