Baked Kale Chips

Super easy and amazingly good!  Kale is a highly nutritious antioxidant vegetable.  Kale has a high level of beta carotene and Vitamin K.  It is a type of cabbage and comes from the same family as broccoli, cauliflower, and collard greens.

I was skeptical at first – but this easy take on kale is a new favorite for sure!  Beats potato chips any day of the week!

What You Need:

  • 1 bunch of kale
  • 1 tablespoon olive oil
  • 1 teaspoon seasoned salt – I used our Hawaiian Coarse Table Salt for a little different taste.
    • Be careful not to add too much salt – a little goes a very long way

Directions:

  1. Preheat oven to 350.
  2. Line a cookie sheet with parchment paper
  3. Remove the leaves of the kale from the thick stems and cut into bite size pieces.
  4. Wash thoroughly and dry – I used my salad spinner
  5. Spread leaves on cookie sheet and drizzle olive oil.
  6. Sprinkle with salt
  7. Bake until edges are brown – about 10-15 mins

Serves 6
